A Healthy Start For Mother's Day
Mother's day is fast approaching and that can only mean one thing - FOOD! It seems as though there is always an occasion to stray from healthy choices and succumb to the peer pressure of eating poorly that goes along with the celebratory nature of holidays. But if your household is anything like mine, you are most likely running the show on Mother's day too! The good news is that this can be used to your advantage. You can prepare the menu for the day and most likely prepare the meals too! Breakfast with the family is a great way to kick off your Mother's day celebration and to lay the foundation for a day of healthy choices.
Here is my "Friendly French Toast" recipe to start your Mother's day off with a delicious and healthy choice:
Ingredients
4 slices whole-wheat bread
1/2 cup egg substitute
1/4 cup plain, light soymilk
A dash of cinnamon
1/2 cup sugar-free, low-carb syrup
A handful of raspberries and/or blueberries
*Recipe serves two adults, modify as necessary
Instructions
Mix egg substitute, soymilk, and cinnamon in bowl. Dip whole-wheat bread slices in liquid mixture, coating both sides. Spray griddle with non-stick cooking spray and set to medium-high heat. Cook both sides of the bread until golden brown. To serve, slice into triangular halves, garnish with a handful of berries, and top with syrup.
Starting your day with a healthy choice will make it that much easier for you to stay on track for the rest of the day.
